When initiating a new recording (cmd-R), it would be helpful to have it open in Paused mode to allow setting of levels. At least as a preference/option.

One can set Amadeus Pro in such a way that CMDR will place in to record/pause mode so levels can be set. To actually start recording press button at left of dialog. See Preferences/general for this.

It already is. And you already can. You can also check the play through box to monitor levels and stuff.

No, that is not what we are saying. IF you open an already existing file, or make a new one, you can set up Amadeus Pro so that when you press Command+r, the app goes in to record pause mode so you can set the levels and if you press the play through button, (like Sarah pointed out), you can listen to what you are doing in real time. Like I said last night, go to your preferences menu, and select the general tab. From there, look to the right and you will see what I'm talking about. For further help, RTFM.
