What does Amadeus Pro need in terms of RAM ? I am about to install it and will also be purchasing a new Macbook and am interested in how I should configure the computer.

It doesn't need anything, but the more RAM you have, the snappier the
whole thing will be.
2GB will probably be very comfortable, but 1GB is perfectly fine.

I run Amadeus Pro on a 2003 G4 Dual 1.25hz with 1 Gig of ram. Works a
treat. Large files (ie, whole vinyl albums, about 400 mb) no problems.
